Rabbits are one of the most sustainable meats out there, yielding more meat for the food they consume than other options. It’s also one of the most healthful meats on the planet. Cool, right?

So, maybe you want to try rabbit out, you think about it, hover over it on the website or stop in front of it at the store, but something compels you to move on. I know that you’re afraid to cook rabbit. You don’t know how to cut one up. You don’t want your hard-earned money to yield a dry, stringy dinner. I. get. it.

But, I’m here to tell you that rabbit can make an amazing, succulent, EASY dinner! And I want to show you how to use it in a preparation that’s simple and familiar enough that the whole family will love it.

In this class, you’ll learn to cut up a whole rabbit, and then braise it down into a fabulously rich ragu sauce. While it cooks, we’ll whip up some fresh pasta and handcut it into thick noodles. We’ll toss it all together at the end, and top with plenty of freshly grated parmesan and fried sage. Best of all, after you eat, you’ll get to take home the rest of your meal to share or…maybe not to share!
