Otherwise known as a spatchcocked chicken, a butterflied chicken is our favorite way to cook a whole bird. Many cheaper or quick service butchers simply split the backbone of a whole chicken and call it butterflied. At Bavette, we completely remove the backbone and the keel bone (at the breast) in order to make the bird easier for you to cook and, most importantly, carve.
